BLACK BEAN QUINOA SALAD

Ingredients:

3 cups cooked quinoa

Juice of 2 limes

2 T cilantro, chopped

1 avocado, diced

1 bell pepper, diced

1/2 red onion, diced

1 can black beans

1 can corn

1 1/2 T olive oil

1 t garlic salt

1/2 t black pepper

1 t cumin

1/2 t chili powder (less or omit if you don't like heat)

1 t Trader Joes chili lime seasoning (optional, but awesome)

Combine all ingredients in a bowl and enjoy hot immediately after quinoa is cooked or chill and serve cold. Adjust seasonings to your family's taste.
